Happy Halloween – How Many Days to Christmas??

Hope all of you and yours have a Happy Halloween!  This is not a big holiday for us especially since we’ve had a sugar free house!

Last week we made the first Streusel topped sugar-free apple pie of the season.  This recipe came off the Equal site.  We’ll be making one a week all fall and winter.

My husband loves pecan pie so I did some looking around and found a sugar-free custard recipe that I could put pecans in (instead of peaches).  I also found a sugar free pecan pie recipe on the WWW that may work.  We’ll see next weekend how they turn out

That will bring up our sugar free pies to three:  Apple, Cheese Cake, and Pecan.

Why all the talk of pies?  They seem to be the only baking (the cheese cake pie is no bake – great for spring and summer) that works with artificial sweeteners.  I’ve tried making cookies and cakes and either they’re not sweet enough or the texture is wrong.  So it looks like the only baking I’ll be doing is pies…

Landed a temp job in the middle of August which was pretty close to the house but the office ended moving all the way out the other side of town a couple of weeks ago – making the commute 30 miles instead of 8.  I called my temp agency and put in my notice - but my supervisor wasn’t ready to let me go so I’m working part time now – three days a week.  I do put in 30 hours during those three days – but I’m finding I really like these four-day weekends!

Especially this time of year – less than 60 days to Christmas! Yikes!

Sorry to run but I’ve got to get a fair bit of stitching done for Christmas gifts……
